Introduction

Coconut water is a thirst quencher with a soothing flavour and has the potential for aggressive domestic and international marketing. The technology developed by the laboratory involves blending of tender coconut water with fruit juices i.e., lemon, pineapple and mango. The process involves use of approved additives and as such facilitates preservation by means of hurdle process. The products have a shelf life of 6 months under ambient conditions and upto 9 months at low temperature. The products are packed in attractive standy packs or HDPE bottles which are highly favoured in commercial marketing.
