Introduction

Meat is highly susceptible to microbial spoilage. It is not possible to detect the intiation of spoilage, i.e., prior to the development of off odour. DFRL has developed a simple, inexpensive, easy to perform test, assembled in the form of a kit to assess the microbiological quality of meat in 10-30 minutes. The kit contains chemically treated paper strip. Paper strip made wet with sterile / boiled / potable / bottled drinking water, pressed against the meat to be tested for 15-20 secs and kept covered. Test paper strip doesn't turn pink upto 30 min and within 10 min in case of fresh and spoiled meat respectively. In case of meat in which deterioration is initiated will turn pink in 11-30 min. This is very useful in any terrain with no lab facility requiring no skilled/ trained personnel.
