Khakra is an Indian traditional ready-to-eat
snack based on wheat. It is known for its crisp-texture and
baked flavour. Khakra is popular especially in Gujarat. Because
of its convenience and long shelf-life, it is also being consumed
during travels and also in all urban areas of the country.
It can be consumed as breakfast/snack food and can also fit
into the main meal. CFTRI has developed technology for Khakra
production, based on the traditional method, of preparation
and it is partly mechanized in order to minimize the normal
manual labour and to increase the production rate and to obtain
uniform quality. The impr~5ved conventional method can easily
be adopted in rural areas and it enables to set up units and
to supply the products to urban markets.
The required raw materials-wheat flour, vanaspathi and salt
are easily available and production unit can be established
in rural areas under co-operative sector. The process is simple
and consists of mixing of ingradients with water for making
dough, sheeting and toasting and baking at optimal conditions.
The equipments required consist of planetory
mixer, chapati/puri press, baking oven, dough sheeter, weighing
machine, heat sealer and other handling equipments.
