Coffee is a widely consumed popular beverage
in the country. Coffee is commonly prepared fresh at homes
using the filter devices. In recent times, as the concept
of convenience and instant preparation prevailed upon consumers,
a new dimension in coffee preparation and consumption has
emerged out. As a result many instant coffee products have
now come into market. Yet another development in this direction
is the technology for coffee brew concentrate in liquid form
(developed by CFTRI) which can be of convenience to the consumers.
The quality of the concentrated coffee brew is found to be
superior to the filtered coffee and it has got a good market
potential with a wider opportunity for being used in hotels,
and other big catering establishments. Concentrated coffee
brew units can be established in rural areas with available
infrastructure.
The process consists of roasting selected raw seeds and grinding
to coarse powder which can then be wetted and extracted in
jacketted percolater using hot water. The coffee brew is then
stored in glass bottles under carbon dioxide atmosphere.
The equipments needed are indigenously available
and include mainly coffee roaster, grinder, extractor, bottling
unit and carbonator.
