Mustard Powder from Mustard Seeds
Introduction
Mustard is one of the leading oil seed crops of the country.
Although, it is mostly used for extraction of edible oil,
mustard seeds as such are also used extensively as a seasoning
material for flavour and pungency in different food preparations.
Dehusked mustard with its flavour and pungency finds use as
table mustard. A pasty product prepared from mustard powder,
salt and vinegar is very popular in Eastern countries. Mustard
powder is also used as condiment in pickles, meat and salad
dressings. Indian black mustard, well known for its flavour
and pungency, and therefore it appears to have a good potential
for export if it can be processed to a quality product. Presently,
in India, a very small number of firms are manufacturing the
product and the technology as practised by these industries
has several operational problems and offers a low product
recovery,. The technology developed by Central Food Technological
Research Institute, Mysore, India overcomes the drawbacks
faced by these industries and produces plain mustard powder
with simple operations, good product recovery and good quality
control. This powder can be used in the preparation of mustard
paste, table mustard and other mustard products.
Process
Graded black mustard seeds are conditioned to loosen the
husk, dried and then seeds are split and dehusked. The mixture
of husk and cotyledons is screened and air classified into
individual fractions. The cotyledons are ground to desire
fineness in a triple roll mill to obtain mustard powder.
