Fresh ginger is fractionated / rewatered.
Volatile ginger oil extracted from the fraction by steam distillation.
Due to presence of surfactance in ginger oil extraction inhibited
on account of emulsion formation.
This has been overcome in the process.
Fresh oil from ginger has better flavoured and aroma profile.
Time and energy savings because the drying stage is avoided.
The process is adaptable for chilli, pepper, turmeric etc.
based on their seasonal availability thus benefitted the farmer
through value addition.
